How to make your own aioli dipping sauce

Although technically made-from-scratch aioli is just flavored mayonnaise, it's a far cry from what you'll find in a bottle at the supermarket. Serve it on gourmet sandwiches or as a dip with crudités, good bread or French fries. The best part: Aioli is easy for anyone to make at home in the comfort of their own kitchen!

Real Simple magazine explains that aioli's unique creamy texture is the result of emulsification. That's when two liquids that naturally repel each other, such as oil and vinegar, are whisked together until they are combined. By adding one substance to the other in a slow and deliberate stream while briskly stirring, you break them into invisible droplets that create a thick solution. Patience is key! Add the oil too quickly and, instead of aioli, you'll simply have a bowl of oil and vinegar. 

We love Chef Jamie Oliver's simple recipe for garlicky aioli. Simply mash half of a garlic clove using StainlessLUX's handsome and durable mortar and pestle set. Then whisk together one egg yolk and one teaspoon of Dijon mustard. Slowly pour in about one-and-a-half cups of olive oil while whisking vigorously. Stir in the garlic and a little lemon juice.

If your aioli separates after you mix it, don't fret. Real Simple recommends adding a single egg yolk to a medium-sized bowl then whisking in the aioli a couple of tablespoons at a time. This should return the dip to the right creamy consistency.
